From Backyards to Buildings

After six weeks of running SMASH out of my backyard, we were selling hundreds of burgers a day and booked out 24 hours in advance. Customers would call days, sometimes even weeks early to reserve their burgers. With summer ending and school just around the corner, I decided that flipping burgers from 6-8pm every day wouldn’t be viable for a full-time student - even with the help of my family and house staff. With this realization, the search for SMASH’s new home began!
We looked for a location near my house that could function as a small takeout kitchen without the need for customers to dine-in. We found a site that used to be a tailor’s workshop for the older residents of the neighbourhood. It was a small building on a dark road, but the area had lots of traffic and therefore, lots of potential. In addition to myself, SMASH started with a manager and five crew members, and we got right to work setting up the kitchen. With it’s bright white neon sign and the constant activity surrounding the building, SMASH transformed the area into a buzzing food hub.
While the small kitchen helped keep costs low, we barely broke even for the first month. In addition to salaries and rent, I had to purchase kitchen essentials ranging from grills/fryers to exhaust systems. However, these expenses were an investment that quickly began paying off. SMASH began to see significant profits as we built up a loyal fanbase. Even large corporations took notice, as both Subway and Papa Johns opened on the same row within 6 months. That once empty tailor’s workshop had become the hottest new restaurant in Lahore!
